Amarone della Valpolicella is a wine that needs no introduction. This full-bodied red wine is produced from the following grapes 70% Corvina Veronese, Rondinella and 5% for a final touch of Molinara 5%.
The harvest still uses traditional methods and it happens at the peak of ripeness. The grapes are then placed in wooden boxes and subjected to slow drying for about 4 months.
In January, the raisin are crushed and the result then is fermented for 40 days. The wine remains for 2 and a half years in oak casks before the wine is refined in bottles fora further 4 months.
Amarone has shades of ruby and notes of black cherry, this wine is recommended for game dishes and aged cheeses. From the opening of the bottle it is suggested to serve after leaving it resting for a few hours and at a temperature of about 17 C °.
