Cervellera Salumi was founded about 32 years ago as a butcher shop run by Giuseppe Cervellera, specializing in the production of meat. The company produces several tasteful salami with all the typical refinements of the low Murgia, an area of Puglia in Italy. Currently, the son Gianluca follows his father in the preparation and distribution of local products, demonstrating already his love and passion for these meat products. Only the animals living wild in the neighboring Murgia and feeding with “Fragni” (the local oak tree) are selected; this characteristic food develops a little extra layer of fat and gives the product a sweet and savory taste.
Cervellera Salumi has been voted Best manufacturer of capocolli Martinesi by the Italian magazine “Lunar di Puglia”.
