This olive oil is produced by Bioagricola Marchesana, an organic farm located near Bari, in the Italian region of Puglia. It is produced from an olive-grove made by a mixed quality of trees in order to get a product that contains the peculiar characteristics of each tree. The pruning and the organic manuring are done annually in order to keep the plants well-balanced and to produce exclusively biological olives. The olives are harvested and processed on the same day to assure their fresh and fruity characteristics. Cold olive oil extraction is provided to keep a strict control on the oxygenation process and to preserve the olive oil flavor and scent.
