Ripasso is well known and appreciated red wine from the Valpolicella area. It is a red wine of high quality with shades of ruby and a refined flavor, made with 70% of Corvina Veronese, 25% Rondinella and 5% Molinara, for a final alcohol content of 13.5% .
The grapes are pressed softly, and the grape must is fermented for 8 days at a controlled temperature, and through a process of constant stirring while the must is contact with the skins. The must is then fermented again with the skins of the Amarone’s raisins, then stored in oak barrels in which the wine will age for at least 18 months, and it is then transferred to the bottles for the final refining for another 3 months.
Best served at a temperature of about 17 ° C
